Cheeseburger Meatloaf
Be sure to use real American cheese from the deli, not "processed cheese products," which leave the meatloaf too wet and crumbly to evenly slice. 

Makes 6 servings 
Total time: 1 1/2 hours + resting
 

1 lb. ground chuck 
4 strips thick-sliced bacon, finely diced 
1 1/2 cups shredded American cheese, divided 
1 cup canned diced tomatoes in juice (14.5 oz.) 
1 egg, lightly beaten 
3/4 cup fresh bread crumbs 
1/2 cup chopped onion 
1/3 cup minced dill pickles 
1/2 tsp. each kosher salt and black pepper 
Cooked chopped bacon 
Diced dill pickles 

Preheat oven to 375 degrees. Lightly coat a 9x13-inch baking dish with nonstick spray. 

Combine ground chuck, diced bacon, 1 cup cheese, tomatoes, egg, bread crumbs, onion, minced pickles, salt, and pepper in a large bowl. Transfer meat mixture to prepared dish and shape into an 8x4-inch loaf.

Bake meatloaf 50 minutes. Sprinkle remaining 1/2 cup cheese on top of loaf and return to oven. Bake meatloaf until an instant-read thermometer inserted into center registers 160 degrees, 10 minutes more. 

Let meatloaf rest 15 minutes before slicing. Garnish top with chopped bacon and diced pickles. 


Per serving: 275 cal; 17g total fat (8g sat); 100mg chol; 1038mg sodium; 8g carb; 1g fiber; 24g protein.

Using minced dill pickles with the kosher salt is great science. Most people would use relish and the mix would be too runny. I’m going with this on my lunch days. Way to use osmosis!!
