WHAT ARE YOU COOKING FOR THIS XMAS?
In Mexico, Xmas dinner is an important event, many of us we can say, that the successful of Xmas dinner depends basicly of the food.
It is a little long to talk about Xmas parties in Mexico, because we start to celebrate on december 12th, this is the Guadalupe's Virgin celebration, and with this party, practically Xmas season is starting, from December 16th, because we have 9 special celebrations everyday till December 24th, because the Mary's pregnancy.
But well... Xmas eve is the top of the celebrations... people here goes to the church, and coming back home the huge and beautiful dinner is waiting.
I spend Xmas eve alone many years ago, but as in many mexican homes, my mother and my sisters.. all family women are in the kitchen chopping stuffs, baking cakes, marinating meats, cooking all kind of nice meals for that important dinner.
In Mexico we make a huge turkey, filled with minced meat cooked with dried and natural fruits, this turkey is served with a gravy made with mangoes or pineapples, or any other nice fruit. My mother makes a Xmas salad like to serving the turkey, this salad is made with chopped golden apples, green and red cherries, raisins, nuts and condensed milk.
Beside that, my mother likes to make cod fish in vizcaina style, it is cooked with lots of onions, garlic, tomatoes, white chilies, olives, capers, raisins, almonds, small potatoes, everything cooked in olive oil, you can eat this with bread or salty cookies.
She hates the cooking..

but she loves also to have "romeritos" this is a kind of herb cooked with "mole" a sauce made with chocolate and more than 20 different kind of chilies, small potatoes, chopped cactus and prawns.
And... also dessert... yes!!! after all that huge dinner!!

she likes to make a cake with dried fruits.
All this with all kind of wines and coffee.
I have not any picture of my mother's table, but I want to give you an idea about the dishes that I described in this thread, they look like this:
